Red Cabbage and Apple Soup (4 servings)
1 red cabbage, shredded
2 red delicious apples, peeled and largely shredded
4 cups beef or vegetable stock
1 tablespoon cider vinegar
2 tablespoons freshly chopped mixed salad herbs
Salt and pepper to taste
Blanch the shredded cabbage in boiling water for 10 minutes. Meanwhile heat the stock in a large pan over high heat. When the cabbage is done, pass through a sieve, and then add to the hot stock. Add the cider vinegar and bring to a boil. Continue to cook for 15 minutes, uncovered. Add the shredded apples, herbs, and continue to cook for 5 minutes. Season to taste and serve immediately.
